OUR FIRST GUEST CHEF!

I am so proud of my brother Tony.  Over the past year he has really gotten into running and biking, so much so, that he just completed his first triathlon.  With the training, comes a healthier way of life, and tonight, he has shared with us a very healthy and delicious looking grilled pizza.

Lets face it pizza is delicious, but it has a bad wrap of not being so great for you. Well we made a fantastic, and healthy pizza using Grilled Chicken Breast, Green and Red Peppers, Mushrooms, Green Olives, a Boboli Pizza Crust and Reduced Fat Mozzarella.


First thing you want to do is make sure you have enough gas. We ran out but thankfully we had a back up tank. It could have been a nightmare, but it all worked out.



Chop up your toppings, we used Grilled Chicken Breast, Green and Red Peppers, Mushrooms and Green Olives.



While you are chopping up your toppings preheat your grill to at least 400 degrees.



As the grill is heating take your Boboli crust and brush Olive Oil on to both sides. Not to much but just enough to help it get a nice flavor and some light charring.



When the grill gets good and hot open it up and give it a good scrubbing. You dont want to taste last nights salmon on todays pizza.

Turn off the burners on half of your grill to use indirect heating. Place your crust on the grill and cook for 2 mins a side.



Pull your crust off the grill and add your toppings however you would like.



Place back on the grill let the magic begin.



We cooked our for about 30 mins. At the 15 minute mark we rotated the pizza a half turn to make sure it cooked evenly. The last 5 mins of your cooking fire up the side of the grill that is off and set it to low just to crispin the crust a but more for a good crunch.


Time to eat! Two servings is only around 500 calories, so grab your self a beer and enjoy your delicious and Healthy Grilled Pizza.
