YOU DON'T HAVE TO MICROWAVE YOUR LEFTOVERS

Had a hockey game last night, so i just needed a quick healthy bite, and had some of our fajita stuff left over...so I decided to make a quesadilla with a side of rice and beans.  And, as the title says a microwave was not used...(don't own one and won't ever buy one)


Got a pan going with some olive oil, cherry tomatoes, sliced onion, salt and pepper.  Put on some medium heat and let things start stewing


Meat had been in the fridge but is already seasoned, since the quesadilla is going to cook at one item, the meat doesn't have to be reheated



rice and beans in a small pot on low while building the quesadilla and pan is preheating



layer meat, then onions and tomatoes from the pan...best part of this is a mix of manchego and asiago cheeses that were in a baggy from Saturday's shredding



Don't forget the cheese, I did in this picture, but don't worry it was definitely there!  Top it and cook it on a griddle or large pan on low medium, let the tortilla get brown, flip, cook, cut into four, plate with little dabs of rice and beans and all natural sour cream, finish with fresh chopped cilantro...



dinner was a winner, we lost the hockey game
